"An urban microfarm-based food production system can capture $30M in fresh produce sales and create 1K small businesses that impact 10,000 families. By repurposing abandoned urban properties and creating market connections for existing producers in around Six Campuses, One University in Columbus, Lima, Mansfield, Marion, Newark, and Wooster, by training 1K farmers to grow the produce that the market demands, by aggregating specialty crops and offering fresh produce all year, cooperatives of micro farmers employing strategic niche marketing can transform food systems and rebuild communities."
